I've been thinking about this. I thought maybe the Riemann-Roch theorem for elliptic operators on a manifold, or the related Atiyah-Singer index theorem, but that is not exactly algebra.

One field that is pure algebra and does come into physics is octonions. There is more to it than Baez's introduction, and you could develop some of the inner subtleties and clarify them.

This isn't much help but it's the best I can do.
