Protons are the particles mostly used in the big circular colliders. But there is another type of accelerator than uses electrons, the LINAC or linear accelerator. The most famous one is SLAC at Stanford. LINACs are not so all-out powerful as colliders but they are much more precise. It was SLAC that spotted the partons inside the proton and gave reality to the quark picture.
