The gravity "of the black hole" is the gravity (curved spacetime) outside the event horizon. If the mass of the black hole changes this gravity reflects it. This all all taken care of in the black hole metrics (Kerr metric or Schwarzchild metric), which have the mass as a parameter. Gravity changes inside the horizon are hidden from us.
