The matter of the star, eventually can no longer hold itself together, either as neutrons or as quarks or as strings or as anything; it collapses toward infinite density under the force of its own gravity. And we have no physics that applies at infinite density. We don't know what happens to all those attributes of ponderable matter, what happens to CPT symmetry, what happens, period.
